  • 2 medium carrots, cut into large chunks

  • Kosher salt

  • Freshly ground black pepper

  • 1 stick of butter or seasoned butter, room temperature

  • 3 fresh rosemary sprigs

  • 1/2 bunch fresh sage

  • Chicken stock or water, for roasting pan
